Gourmet Smash Burgers
Today we made our gourmet smash burgers.
First, we prepared the toppings. We sliced one, large garden tomato into thin slices and slice one yellow onion so that we had perfect rings. Lastly we placed some baby spinach aside in a bowl.
And we made are our own, aoli. We mix mayonnaise ketchup, mustard Worcestershire sauce, and sriracha sauce and set it aside in a small bowl.
Next, we made our bread crumbs for the Patty. We took one slice of bread and toasted it, until it was crispy, and then grind it up in the blender. We also beat one egg and set it aside.
For the Patty we have one pound of 93 percent lean ground beef. We start by seasoning it with salt, pepper, garlic powder, onion powder, Rosemary, Thyme, and Worcestershire sauce. Then we add the egg, we beat earlier and the bread crumbs and mix it into. We formed the Patty into roughly the size of tennis balls. You should be able to make 4 patties per pound of meat.
Next, we sautéed some onions on the skillet in order to get them browned and slightly caramelized. We put the Burger on the grill and "smashed it" using a clean metal bowl because we don't have an actual Burger Smasher. So then we let it cook for 3 minutes on one side, flipped it and cooked it for another three minutes. Then we flip it one more time and add cheese and put the grilled onions on top, after which I use a bowl with a bit of water to steam it under the bowl which will help melt the cheese and give it a good look.
Finally, we build the burger. We placed down a brioche bun and spread our aioli on both sides. About a tablespoon on each side. Then we add the spinach, tomato, and on the other side, the Patty with the cheese and grilled onions. And that is our completed Burger.

- 1lb ground beef (we used 93% lean)

- Bread crumbs (1 slice of bread)
